the best granola bars

i've been making these granola bars fairly often lately. they freeze well and are a go-to snack for me when i'm busy during the day. full of nuts & seeds and sweetened with honey, these bars are just as healthy as they are delicious!

¾ cup tahini (i've also used a mix of tahini, peanut butter & almond butter. i'm sure any nut butter would work.)
1 tsp vanilla
¾ cup honey
1 cup rolled oats (large flake)
½ cup flax seeds
½ cup pecans
½ cup sunflower seeds (unsalted)
1 cup slivered almonds
¼ cup pumpkin seeds
½ cup coconut

mix the tahini, vanilla and honey in a large bowl. add the rest of the ingredients and mix well. press into a greased 8x12” pan. use plastic wrap (or your greasy hands)
to help press in firmly. bake for 15 mins at 350 degrees c. let cool, cut and remove from pan.

enjoy! even ollie loves them.
